The Backstory:
On the years where I would spend Christmas in Texas visiting my family I have memories of baking cookies at my Mimi's house. Everyone would come over: my aunt, my great aunt and my Nana, and we would bake all day long. My PawPaw celebrated his birthday on December 25th so we always had to bake his favorite cookies. They were pink meringue cookies of some sort with his favorite nuts: pecans! He loved them! We would also make my Nana's famous Koulourakia Cookies. While I don't discuss it much, I am Greek courtesy of my Nana. These cookies were a staple in the house at Christmas time. They are simple and so delicious. They're best enjoyed with a warm cup of coffee. They're firm on the outside but soft, crumbly & buttery on the inside. The perfect cookie.
Why the Kitchen Aid and not a cookie? Because of my other great grandmother, my Abuela. My Puerto Rican roots come from her. Long after she passed, my mom passed my Abuela's Kitchen Aid Mixer to me. I have baked holiday desserts, every day treats, and my kids' birthday cakes for the last several years with the help of that Kitchen Aid Mixer. And every time I pop an attachment on & get to baking I smile and think of my Abuela. It's a way for me to feel connected to her even when she's no longer physically here.
